Condensed Cream of Mushroom Soup

Image
A few months ago, I came up with this awesome recipe for a Condensed Cream of Mushroom Soup.  This recipe is easy to make. It makes 4 pint size jars. It whips up in just a few minutes… and keeps in the fridge for a week or the freezer for months.  If you want to freeze it, just place the mixture in a quart size freezer bag and freeze.   Condensed Cream of Mushroom Soup 1 box of Veggie Stock  (32 oz.) 2 cups of  almond milk 2 teaspoon of gluccie 1 8 oz. package of fresh mushrooms chopped small 1 teaspoon salt 1 teaspoon garlic powder 1 teaspoon pepper 1 teaspoon onion powder 1/2 teaspoon thyme In a large saucepan, Bring your veggie stock to a boil over medium heat.  While that is going on, in your blender… place one cup of almond milk and your gluccie… blend well… then set aside. Add your mushrooms, and seasonings to your boiling stock.  Add the rest of your milk, and  whisk your blender of milk and gluccie.  Continue to stir s...

Shortbread Cookies ~ THM, Low Carb, Gluten Free

Image
First let me say this, I am in love with the new THM baking blend.   It is so versatile that its unreal!  It was a little splurge for me to buy it when I did, so I have been very picky as to what I use it for.   By far it has been the best thing for this gluten free mom! A few days ago, I made a crust using the THM baking blend for a no bake cheesecake.  I feel in love with the crust. (Who doesn’t love pie crust?!?) The pie crust kind of tasted like a shortbread cookie to me.  I wanted to recreate all that yumminess in cookie form.  This recipe is so simple to make.  It takes just a minute or two to mix together in a food processor.  If you don’t own one, no problem!  Just let your butter soften and mix! The best part of this recipe is it only uses 4 ingredients… THM baking blend , THM sweet blend , butter, and vanilla.  After its mixed, just roll and let chill in the fridge for two hours.  Cut and bake.  ...

Corn Bread ~ S

Image
I love Corn bread!  I have tried and like almond flour corn bread recipes, but my family does not care for it. I have been playing with a “corn” bread recipe. This recipe uses no almond flour! It’s a win for this family. “CORN” Bread 1/4 cup Golden Flax seed meal ( blend in blender for a finer meal, if you have texture issues with flax seed…) 1/2 cup oat fiber 1/4 cup coconut flour 1 teaspoon of sweet blend ( I like a sweet corn bread) 2 eggs 1/2 cup almond milk 2 Tablespoon melted butter dash salt 1 teaspoon baking powder Mix all wet ingredients, add dry… mix well.  You may have to add a little more milk if your mix is not wet enough.  Use your own judgment. Pour into a buttered, or sprayed  square 8x8 pan. Bake at 375 for 15 to 20 mins are until done. Add some butter on top while still hot. This is a great complement to my BEEF STEW . Enjoy!

Simmer until veggies are cooked and meat is tender. (around 30 to 45 mins in total) When almost done, whisk in gluccie…   add more if need fo...

Rainy Weather Equals Soup

Image
The weather has turned cold (well cold for South Texas) and its been raining. I mean its rained for a few days straight making this gal cold and in need of warm food. I remember as a child when it got cold my mother would always make a huge pot of veggie soup.  It would last us days… yes days! She would add every kind of veggie she had.  She never had meat in it.. just a little salt pork for flavoring. As kiddos, we would just eat it up with crackers.. it was warm comfort food!   I decided to change this old childhood favorite a little.. making it… Chicken veggie Soup   There’s not really any measurements for this recipe.  You just add what you have! Oh, and before I forget…..  I MADE THIS IN MY CROCKPOT!   This is what I  did: I placed a whole cut up chicken in the crockpot. Added water to fill it up.. Cut up some onion, celery, and a few carrots (2)… added them in. Salt and pepper   Turned on high and let it cook… ( I...
